Fried Milk Leche Frita 揚げた牛乳 レチェ・フリータ

今回はスペインのおやつ レチェフリータ leche frita を作りました。
シナモンとレモンの香り、もちもち とろり とした初めての食感。

1.鍋に牛乳 350gを沸騰させないように温める。
2.レモンの皮 半個分、シナモンステック 1本を入れ、蓋をして30分ほどそのまま置く。
3.牛乳 120gにコーンスターチ 55gを入れ混ぜる。
4.ボウルに卵黄 2個、砂糖 45gを入れ混ぜる。
9.バニラエッセンス、無塩バター 15gを加え混ぜる。
10.オーブンシートを敷き込んだお好みの型(今回 15センチスクエア型)に9を流し入れる。
14.薄力粉 20gを薄く付け、溶き卵 1個も付ける。
16.温かいうちにグラニュー糖 45gをまぶしつける。お好みでシナモンを加える。

This time we’ve made the Spanish dessert, “leche frita”, which is literally translated “fried milk”.

The fragrant cinnamon and lemon combined with the soft, sticky texture is unlike anything we’ve ever had before. This dessert is something we felt would be really exciting to sell at a food stall!

1. Warm 350 g of milk in a pot, but don’t let it come to a boil.
2. Add half a lemon peel and 1 cinnamon stick, then cover with a lid and let it sit for 30 minutes.
3. Mix 55 g of corn starch into 120 g of milk.
4. Mix 2 egg yolks and 45 g of sugar in a bowl.
5. Add the contents of step 3 into step 4.
6. Remove the lemon peel and cinnamon stick from step 2.
7. Add the contents of step 5 into the contents of step 6.
8. Put to heat. Keep stirring to prevent it from burning, allowing it to simmer until it becomes thick.
9. Add vanilla extract and 15 g of unsalted butter.
10. Pour the contents of 9 into into a baking pan of your preferred shape (this time, we used a 15 square inch pan) after lining it with a piece of parchment paper.
11. Drop the pan onto a hard surface a few times to remove air bubbles and flatten the mixture.
12. Seal with a piece of plastic wrap. Let it cool slightly before putting it in the fridge to cool for around 2 hours.
13. Cut out pieces to your liking.
14. Sprinkle 20 g of baking flour and add 1 beaten egg.
15. Put a generous amount of vegetable oil on a frying pan and fry the contents of 14.
16. Add 45 g of granulated sugar while still warm. Add cinnamon to taste.
17. All done. The treat is delicious whether hot or chilled.
